Homemade Granola Recipe

2 1/2 cups of Oats

3/4 cups of Almonds

3/4 cups of Pumpkin Seeds

3/4 cups Walnuts

3/4 cups of Chia Seeds

3/4 cups of Brazil Nuts

3/4 cups of Macadamia Nuts

3/4 cups of Sunflower Seeds

1/8 tsp of Salt (optional)

1/2 cup of Honey, Agave, or pure Maple Syrup

1/4 cup melted Coconut Oil (optional)

1tbsp Vanilla Extract (optional)

Dusting of Cinnamon or Ginger Powder

Great options for fruit to add to the mix : dried Cranberries,

dried Goldenberries, dried Apricots, dried Papaya, dried Goji berries,

dried Coconut flakes.

Preheat oven to 300F

Line a large baking sheet with parchment paper

Toss the dry ingredients into a large bowl

Set aside

In a medium bowl, whisk honey and coconut oil together until combined

Whisk in vanilla extract

Pour over the dry ingredients and toss to coat

Make sure all of the oats are moistened

Spread the mixture with a knife onto the prepared baking sheet and bake for 35 minutes

until golden, stirring every 10 minutes.

Allow granola to cool completely - the air will help the granola to obtain a

crunchy texture.

Store this in an airtight container at room temperature for up to 3 weeks.

Serving suggestions:

Serve in a bowl with milk, yoghurt or creme fraiche, or fresh fruit such as

blueberries, banana or raspberries, or on its own as a healthy alternative to snack on.
